Danish Aebleskiver Recipe (makes 35-40 aebleskivers) 3 Large Fresh Eggs (separated) 2 Cups Buttermilk 1 Pkg (12 oz.) O&H Aebleskiver Mix Preheat your Aebleskiver pan on the stove top at a medium heat level. Separate the eggs with the whites in a 1 or 2 quart bowl for whipping the whites, and the yolks in a 2 quart bowl to mix the batter. Whip the egg whites until firm and set aside. To the bowl of beaten egg yolks, add 1 cup of buttermilk and blend well. Sift the package of O&H Aebleskiver Mix and add to incorporate the liquid, then add the remainder of the buttermilk and continue mixing until almost smooth. With a mixing spoon, fold the whipped egg whites into the batter.
