    Serving Instructions

    Kringle is best served at room temperature or warmed in the oven. Remove the Kringle from the wax bag, remove plastic sheet and remove from plastic tray. If a warm Kringle is desired, place in a 350 degree oven for 3 1/2 minutes. Kringle can also be warmed in a microwave. When ready to serve, cut Kringle into 1 or 2 inch slices. Then watch for approving looks and gestures. For storage, Kringle freezes well. To thaw, let stand for 6 hours in room temperature or 12 hours in a refrigerator.

As a native of Racine, I've been hauling and shipping kringle all over the country for years. During this time, I've sampled kringle from many different bakeries in Racine and enjoyed almost all of them far more than normal breakfast fare. I've also been asked by many folks which is my favorite. I don't hold any strong allegiances to any specific bakery, although I do have preferences.

In general, I tend to avoid any bakery that makes a point of mentioning "Racine" or "Real" or "Genuine" in their business name. If they need to use their name of cite their location to convince you of their validity, they're probably lacking somewhere else.

The question of who makes the best kringle is debated often in Racine and no clear winner ever seems to be determined. In fact, most bakeries in Racine can claim some sort of victory as the oldest or the favorite as voted upon by some newspaper or magazine. I decided it was time to do my own, somewhat scientific survey. To minimize the variables, I selected one of the most common and popular flavors- cherry.

The bakeries I selected for this survey were O&H, and two other Danish-sounding bakeries. The test subjects were the staff at ESPN 540 in Milwaukee, which totalled ten people. Although I initially included my own vote in the final results, I have decided to strike it, for fear of any bias I might have had coming into the survey and the fact that I knew which kringle was which as I tasted it.

All ten participants were asked to rank the kringles from one to three and after ten votes (excluding my own), the results were a three-way tie. That really surprised me, as when I had done smaller blind taste tests, the results were always clear. That was not the case with this test and I have some theories as to why that might be.

One was the lightest and flakiest. However, it had what I call "dead spots," where there was little or no cherry filling. Taking one for the team, I elected to personally dispose of these pieces. After the fact, I realized this may have swayed the outcome in this bakery's favor, as test subjects might have voted differently if they had eaten a dead spot piece.

O&H was the most consistent kringle of the three, in terms of one piece tasting the same as any other sliced from the same kringle. The same could also be said for it's texture in terms of lightness and flakiness.

The third kringle surprised me, as visually, it was the darkest kringle of the three and the darkest Racine kringle I'd ever seen. I even questioned during the testing, whether it might have been left in the oven a bit too long. It was the most expensive and also had the most radical variations of the three in terms of texture and taste. Although there seemed to be cherry filling throughout, it was clearly visible on one side, while the other side had more of a biscut texture and actually broke the plastic knife as I attempted to slice it. I've never had that happen before. I also noticed the open cherry side to be much tastier than the biscut side, which could have influenced the voting results, depending on which pieces the voters tasted. My sister (a former baker herself) mentioned to me a few weeks ago that she thought that bakery may have changed their recipe recently, which after tasting that kringle, I might question as well.

Since these results were inconclusive, I may have to run another test. The great thing about kringle is that there are more than a dozen different flavors, so for the next test, I may try another of the most popular flavors- pecan.

You put such effort and love into the quality of the kringle in the bakery, but[...] The kringle was melted, squished to the paper. We had to scrape the kringle off the paper and smear it back on, it was very wet and broken down. The texture was poor and we could better serve it in a glass with a straw. It was unpresentable and we could not share it without being embarrassed.
